Taco Soup Recipe

Since I mentioned making taco soup in an earlier post today, I have had several requests for the recipe. This is an old recipe that I have made for years and we love it!! You will see that it is so easy to make, yet it is always a hit when you serve it. This is a mild version, but if you like things spicier, just add chili peppers or jalapenos to taste if you want it really hot.

Taco Soup

1 pound ground beef
1 large onion - chopped
1 can pinto or kidney beans (I have used black beans)
1 can whole yellow corn
1 can hominy - I prefer the white
1 package taco seasoning mix - I use mild
1 package dry Ranch dressing mix
1 large can whole tomatoes - I put mine in the food processor to break up
1/2 cup salsa

Brown beef with chopped onion and drain off fat.

Add with remaining ingredients in large pot and simmer for at least one hour.

Garnish as desired with grated cheddar cheese, avocado, tortilla chips/fritos, sour cream, cilantro, etc.
Or just eat the soup as is with no garnishes!

*This soup freezes well. If it becomes too thick, add water or chicken broth.

This soup is a favorite at our house. I hope you enjoy it too!!!

  7. Sounds so yummy - especially with the ranch dressing nix (the secret ingredient!) This sounds like a great one to try while we are waiting for all this snow to melt.   10. Thank you so much for sharing this recipe! I think I made one fairly similar years ago and not only did I forget about it but I'm not even sure if I could put my finger on the recipe. Getting older does add a twist to everything now. :)

  13. You know after all our girls get together and get to know each other maybe all us Mamas can go with them again some time and meet each other. There are several bloggers who Kelly is "friends" with who have very interesting Mothers who blog also! That includes YOU!!!

    i read your post about your Mom and Dad and it sounds so much like what I went through with my parents. My Mom had a detached retina and had surgery. I have had two laser surgeries on my tears in my retina. I don't know if heredity has anything to do with it or not.

    I always say dealing with older parents is harder than raising children. It just is so difficult to take charge of them when they have had "charge" of you all your life! The tables are turned and it just doesn't seem right! You just have to experience it before you truly understand the emotional toll it takes!
